I used to enjoy this steak variation on Eggs Benedict when I stayed at the Stardust or at Binions when I was downtown.On my last trip Binions no longer served this,amongst other menu changes. [Frown]
I'll back in 2 weeks & will be on the quest once again. [Reader]

I have never heard of Eggs Rothschild. There is a Soufflé Rothschild, which is a dessert and it is made with fruits such as strawberries and pineapple. The funny thing about this dessert, according to the Larousse Gastronomique, is that in making it the crystallized fruit must be marinated in Goldwasser which is a sweet liquor that contains specs of gold. I don't know restaurants in Vegas that offer this dessert, but maybe Guy Savoy does.

There is also a Fabergé egg know as the Egg Rothschild, and it is valued, I believe, at eighteen million dollars, but it is not edible. Maybe the dish you saw on the menus of the Stardust and Binions was a joke on this? What was it exactly? I hope it was edible. [LOL]

Rob,

Hash House a-go-go has some unique Benedicts:

Crispy hand hammered pork tenderloin w/ market yellow tomato, spinach, bar b' que cream and topped w/ scrambled eggs

HH original w/smoked bacon, fresh tomato, fresh spinach,roasted red pepper cream and topped w/ two basted eggs

House roasted chicken w/ mushroom, sliced market yellow tomato all crowned w/ basil pesto cream and two basted eggs

House smoked salmon w/ fresh asparagus, sundried tomatoes, chili cream and two basted eggs

Andy's sage fried chicken w/ fresh spinach, hardwood smoked bacon, market tomato, griddled mozzarella, chipotle cream and scrambled eggs

All benedicts served on a fresh split biscuit with griddled mashed potatoes

Any one of these is PLENTY for two people.

SenatorJM........you make me want to vist hash House A-Go-Go more than ever now. I cant wait for my next visit. Just from your breakfast descriptions I can see this becoming my new Favorite breakfast stop.

I wonder if they substitute steak for the canadian bacon on a benedict. That sounds yummy too.

Medallions of filet mignon topped with sautéed mushrooms, poached eggs and Béarnaise sauce, served on a toasted English muffin

This is the Eggs Rothschild I had at the Stardust and this description is from the coffee shop menu at the Suncoast.Hopefully I can find a closer option. [Shrug]

Thanks for the description. At first I did not find any mention of the dish in Google, but I finally found mention of it in the link below from LVRJ.

Eggs Rothschild in LVRJ

They sound wonderful for breakfast when you are not on a diet and need lots of energy for the day ahead [LOL] .

Couldn't you go to the Suncoast next time you are in Las Vegas and order them? I just visited the Suncoast site and Café Siena offers Eggs Rothschild on their breakfast menu for $9.99. Bon appetit! [Beer Chug]

Thanks for the LVRJ link.I wasn't aware of the mob connection.

Eggs Rothschild, signature dish named for one of the Stardust's original Mob owners (along with 'Chicken' Cacciatorre and the sinister 'Clams' Marinara).

I don't normally drive when in Vegas.I prefer comp drinks & shuttles [Beer Chug]
However there is a shuttle from Bill's to the Suncoast that begins trips at 11 AM.This might be a good idea for a day trip.

Well, I posted the LVRJ link because of the mention in it of Eggs Rothschild, but I have no idea what Quackerdoodle Jones means by the phrase, "Eggs Rothschild, signature dish named for one of the Stardust's original Mob owners", in the readers comments. Who is this original Mob owner named Rothschild? [Confused] I have absolutely no idea. I was looking at the site on Strip history, a site that has an extensive account of the Stardust and all that went on there since its foundation, and there is no mention of a Rothschild. I know the name Rothschild in a different context, of course, it is the name of a very famous and rich family of bankers, but I have never seen the name associated with Las Vegas. [Idea] Could it be someone in the Stardust cafeteria made a spelling mistake? There is someone associated with the Stardust named Frank "Lefty" Rosenthal. Could it be that the chef of the cafeteria at the Stardust did not know the difference between 'Rothschild' and 'Rosenthal', and used one name for the other? I have no idea. [Confused] If someone knows the solution to this puzzle, please clarify. Thanks.

I don't understand. The Stardust chef was a movie buff? The eggs dish was invented after 1995 when the movie came out? Or maybe a little earlier when the "Casino" book came out? In the movie "Casino" the Stardust becomes the Tangiers, and Frank "Lefty" Rosenthal becomes Sam "Ace" Rothstein. Rothstein is closer to Rothschild than Rosenthal, but it is still a different name, and not the name of the eggs, so there must be an additional explanation. [Confused]

Yes, I got it before, but the real life character was Rosenthal, thus no Rothstein, so if this was not your joke, but the chef's joke, then the dish is not older than the book-movie. It could be, but it would assume the chef-inventor of the dish and its name is a movie buff with a knack for playing with words. The explanation is sort of convoluted, and, besides, it is our guess, which guess might not be the real origin of how the name of the dish was chosen [Confused] . It is still something for Sherlock Holmes, but since there are many regulars of Stardust around, and former employees, someone might know for sure how the name originated.

It's not from Canada, but from Clermont, Kentucky, but the bourbon I mostly drink and I would recommend is Knob Creek! A votre santé! [Beer Chug]
